On October 28 from 4 to 5pm, Burnt Timber Brewing & Tavern in Wolfeboro will host a Kimchi Seminar during which participants will learn the basics of lactobacillus fermentation and make their own kimchi. “Participants will also learn more about the history and health benefits of lacto-fermented foods,” said Owner Eddie Michno.

A staple in Korean cuisine, kimchi is a traditional side dish of salted and fermented vegetables. “We will provide participants with base kimchi ingredients and have other ingredients on hand to allow for the recipe to be tweaked to their desire,” he said.

Participants will leave, he added, with a large mason jar of their own kimchi and the knowledge to complete a healthy lactobacillus fermentation and use the finished product for themselves. “It will be fun and informative,” said Michno. “This is a seminar for folks of any cooking skill level. All are welcome.”
