Burnt Timber Brewing & Tavern releases new beers and cider

In October, Burnt Timber Brewing & Tavern, a 24-seat brewpub in Wolfeboro, will release several new beers, including a cider. “We are excited to introduce people to a wide variety of flavor profiles,” explained Owner Eddie Michno, who opened Burnt Timber Brewing & Tavern with wife Mara in 2017.  

The new releases include “Mo’ Summer,” a mojito-inspired cider featuring pineapples, zested limes and mint. Full Send SMores Porter is the beer version of “everyone’s favorite fireside snack,” while Smoked Apple Ale features barley smoked over applewood chips with caramelized local apples.  

“We also have a Norwegian farmhouse beer that uses juniper boughs and a mixed-culture yeast strain that was fermented in a sherry barrel,” he said. “All of our releases are approachable while at the same time eccentric, which defines our cooking philosophy, too.”  

He cited their recently released kimchi as proof. “We fermented it in a previously used gin barrel to create a Gin & Juice Kimchi,” he said. “This barrel fermented kimchi consists of cabbage, scallions, ginger, pineapple and gochugaru, which are Korean chili flakes.”

In looking ahead to the winter, Michno said they are already planning some beers and food that will “surprise people.” “We are always trying to push the envelope of our flavor profiles -- whether for our beer or food,” he said. “We like to take people on a fun and comfortable taste adventure when they are here.”
