Burnt Timber Brewing & Tavern to host Farmer’s Dinner
In mid-August, Burnt Timber Brewing & Tavern will host a Farmer’s Dinner, which will feature a coursed, plated dinner with ingredients from local farms and the farmers who grew them. “We are very excited about it,” said Chef Nikki Hanna, who said the event will be similar to the TV show, Chopped. “The farms will give us the ingredients, so our challenge will be to showcase them in creative and unique ways.”
Each course will feature a different local farm. “We can do whatever we want with the ingredients,” she said. “We could go from a French prep for a duck breast to a curry dish. It will be exciting for everyone and a great experience.”
Fellow Chef Oliver Harston agreed and said the dinner underscores their emphasis on “local and innovation” in their daily menu. He cited their kimchi as one example. “We feature several kinds of kimchi, ranging from a traditional variety to a green tomato and brussel sprout kimchi,” he said.
According to Harston, the COVID-19 pandemic also gave him some time to “lock into” a kimchi that features green apples and ginger and pairs well with their smoked meats. “I based it off of something Chef Edward Lee has done,” he added. “It took some adaptations, but I’m pleased with it, and our customers have really responded well to it.”
Hanna said the best part for them as cooks is that they can experience the customers’ reactions to their food. “It’s an open kitchen, so we can interact with the people eating our food,” she said. “It’s a much different experience as a cook when you can look in the eyes of the people eating your food. It creates a different level of investment.”
It is an investment, she said, that works both ways. “We encourage our customers to experiment with us,” she said. “We have a venue where we can try things out.”
Harston agreed and added, “Be prepared for an adventure when you come here. We’ll take good care of you.”
